Basic seasoned pan-seared and baked pork chop with a simple, flavourful dijon, shallot sauce.

Ingredients

2 pork chops
1 tsp olive oil
1 finely diced shallot
2 sliced garlic cloves
1/2 cup white wine
1/2 cup chicken stock (low sodium)
1 1/2 tbsp dijonnaise mustard (or dijon)
1 tbsp chopped fresh parsley
salt and pepper to taste

Preheat oven for 425.

Brush both sides of the pork chops with olive oil and season with salt and pepper.

Over medium-high heat, get a non-stick pan hot. Add pork chop to sear and brown. Approximately 2-3 minutes each side. Be sure to render the fat down.

Remove from pan. Finish the pork chops in the oven for 3-5 minutes, depending on the thickness.

In the same pan you seared the meat in, add shallots and garlic. Sauté for approximately 2 minutes.

Add white wine to onion mixture, scraping the brown bits from the pan. Reduce the wine down until a teaspoon remains.

Reduce heat to medium-low and add chicken broth. Mix thoroughly.

Whisk in dijonnaise until well-incorporated.

Add parsley to sauce, stir and serve on juicy pork chop.
