Peach Ginger Slow Cooker Steel Cut Oats

Description

Slightly sweet and tart from peach, spiced with ginger and cinnamon, fiber-packed, heart healthy, lazy slow cooker steel cut oats. Top with fresh fruit, nuts and yogurt of your choice.

Ingredients

3 peaches, chopped, pit, skin removed
1 1/2 cup almond milk (or skim milk)
1 1/2 cup water
1 cup uncooked steel cut oats
2 tbsp brown sugar
1/4 tsp salt
3/4 tbsp ginger
1 1/2 tbsp coconut oil
1 tbsp ground flax seed
1 tsp vanilla
1 tsp cinnamon
Plain or Vanilla yogurt, fresh peaches, almonds or walnuts, if desired.

Directions

Spray the inside of your slow cooker, base and sides.

Boil the peaches for 30 seconds.

Drain and run cold water over the peaches to stop the cooking process.

Remove skin and pit from peaches, chop and add to slow cooker

Add and mix all contents into the slow cooker. Be sure to portion the coconut oil. I usually do 3 instalments of 1/2 tbsps.

Cook on low for 7-8 hours.

Once ready, portion them out into 6 small mason jars. When ready to eat, add a tbsp of water and heat in the microwave for 1 minute. Top with your choice of yogurt and nuts.
