Description

Incredibly flavourful and simple authentic Greek lentil soup made with only five ingredients.  Topped with olive Oil and cutting red wine vinegar.

Ingredients

1 1/2 cup green lentils (rinsed)
4 cup vegetable (or chicken) broth
1 cup water
2 dried bay leaves
2 tbsp tomato paste
5 smashed garlic cloves
salt and pepper to taste
olive oil (garnish)
red wine vinegar (garnish)

Directions

Thoroughly rinse the lentils.

Throw all of the ingredients into a pot and bring to a boil. Cover and reduce to a simmer.

The longer you cook it the better. Cook for at least 1 hour, you may need to add more water to the pot.

To enjoy, discard bay leaves and serve with a drizzle of olive oil and red wine vinegar.
