Ingredients

2 1/4 cup oat bran
1 1/4 cup skim milk
1/4 cup chopped walnuts (plus extra for topping)
3 ripe bananas
1/4 cup packed brown sugar
2 egg whites
1 tbsp baking powder
2 tbsp vegetable oil
1 tsp cinnamon

Directions

Preheat oven to 350. With an electric mixer, combine banana, sugar, vanilla, egg whites, milk and vegetable oil.

In a separate bowl, mix together oat bran, baking powder and cinnamon.

Mix the wet and dry ingredients together. And fold in walnuts.

Pour batter into a lined muffin tray. Top with walnuts and bake for 20 minutes or until toothpick comes out dry.

Remove from oven and let cool on a wire rack before enjoying.
