As I’ve mentioned before, I dread cooking with chicken breast, it’s boring when there’s no bones or no skin but to have a healthy diet, it’s the better choice. Now I rely on marinades and spices to put some flavour in these chicken boobs. Kosta’s Chicken Souvlaki on a Pita w/ Greek Yogurt and Salad

I get my chicken souvlaki already marinated at a local butcher, Kosta’s Meat Market. The marinade is simple, salt, pepper, paprika and olive oil. It makes a great, tender souvlaki which I sauce up with my husbands favourite greek salad and yogurt all in one goodness of a pita. Support your local butcher, I can almost guarantee the meat selection and quality is better.

Ginger Sriracha Salmon w/ Green Beans in Caramelized Onions and Almonds

My husband claimed that he hated salmon, but after reading about the health benefits that this fish packs, he gave it a real try. I added his hipster Sriracha and jammed it with ginger and garlic and I’m happy to say, ’twas extremely tasty. The caramelized onions with the toasted almonds with the tart dressing on the green beans. So good. Even better when combined with a bite of spicy salmon.

I have made a ton of chicken recipes that have failed me, I’ve searched high and low for recipes for the dreaded, boring cut of skinless, boneless, chicken breasts, and have come out with empty tummies more than once. A lot of my poultry dishes will be in stir fry, breaded or BBQ format, because it was my way of amping up flavour while maintaining it’s heart healthy factor.
